Peach and Peanut Butter Gazpacho

2 lbs peeled, halved and roasted peaches (frozen peaches can be used)
1/4 red onion chopped
1 1/2 cucumbers chopped
1 1/2 large tomatoes chopped
1/2 cup peanut butter
1/2 cup cilantro chopped
1/2 jalapeno
10 oz apple juice
1 lime juiced
1 clove garlic
1/2 tsp sea salt
1/4 tsp pepper

Peach and Peanut Butter Gazpacho Directions

  • Peel peaches, remove pit, and slice into halves. Place fresh or thawed peaches on a baking sheet. Roast in a preheated 350-degree oven for 15-20 minutes or until slightly caramelized.
  • Once peaches are ready, place all remaining ingredients into a blender and blend until smooth. If peaches are not sweet, add a little sugar to the mixture.
  • Serve chilled and garnish with chopped cilantro.
