2 lbs peeled, halved and roasted peaches (frozen peaches can be used) |
1/4 red onion chopped |
1 1/2 cucumbers chopped |
1 1/2 large tomatoes chopped |
1/2 cup peanut butter |
1/2 cup cilantro chopped |
1/2 jalapeno |
10 oz apple juice |
1 lime juiced |
1 clove garlic |
1/2 tsp sea salt |
1/4 tsp pepper |
Peach and Peanut Butter Gazpacho Directions
- Peel peaches, remove pit, and slice into halves. Place fresh or thawed peaches on a baking sheet. Roast in a preheated 350-degree oven for 15-20 minutes or until slightly caramelized.
- Once peaches are ready, place all remaining ingredients into a blender and blend until smooth. If peaches are not sweet, add a little sugar to the mixture.
- Serve chilled and garnish with chopped cilantro.
