Peach and Peanut Butter Gazpacho

|2 lbs peeled, halved and roasted peaches (frozen peaches can be used)|
|1/4 red onion chopped|
|1 1/2 cucumbers chopped|
|1 1/2 large tomatoes chopped|
|1/2 cup peanut butter|
|1/2 cup cilantro chopped|
|10 oz apple juice|
|1 lime juiced|
|1 clove garlic|
|1/2 tsp sea salt|
|1/4 tsp pepper|
Peach and Peanut Butter Gazpacho Directions
- Peel peaches, remove pit, and slice into halves. Place fresh or thawed peaches on a baking sheet. Roast in a preheated 350-degree oven for 15-20 minutes or until slightly caramelized.
- Once peaches are ready, place all remaining ingredients into a blender and blend until smooth. If peaches are not sweet, add a little sugar to the mixture.
- Serve chilled and garnish with chopped cilantro.
