2 cups rolled oats
1 tbsp cinnamon
1 tsp baking powder
1/4 tsp salt
1 egg
1/4 cup maple syrup
1 cup almond milk
1/4 cup peanut butter
1 mashed banana
1 tsp vanilla extract
2 tbsp melted coconut oil

Banana Peanut Butter Baked Oatmeal Directions

  1. Preheat oven to 350 degrees. In a large bowl combine oats, cinnamon, baking powder, and salt.
  2. In another bowl mix egg, maple syrup, almond milk, peanut butter, banana, vanilla, and coconut oil.
  3. Add wet ingredients to dry and mix until combined.
  4. Line or grease a muffin tray and evenly distribute mixture.

Bake for 30 minutes. Remove from oven and top with sliced banana.
